
What Do We DO With Those Peach Truck Peaches!! (p. 149)

Who doesn't love a beautiful, fresh, just ripened peach? The question becomes "can I actually eat all of these". The answer is invariably "no" and, despite how delicious they are, you can only gift them "X' number of times before people start running from you. I have a solution. Instead of giving your peeps the peaches, give them a beautiful jar of Bourbon Peach Jam. I guarantee you, you will have people eagerly looking for you and your gifts of sweetness!
This delicious bourbon peach jam can be used on your biscuits and toast, top a block of cream cheese for a party dip, be a yummy topping for your ice cream, or an excellent addition to any charcuterie board you are sharing! This recipe can be kept in the freezer for up to a year or for up to 3 weeks in the refrigerator so you can either create an annual supply for yourself or be a good neighbor and share!
Ingredients
- 4 cups of ripe peaches (blanched, peeled and diced)
- 1 ½ cups sugar
- 3 tbl bourbon
- ½ cup water
- 1 tbl freshly squeezed lemon juice
- 4 tbl fruit pectin
- Canning jars, seals and lids (make sure these are sanitized).
Directions
- Blanch, peel and dice your peaches and set aside.
- In a large saucepan, add your sugar, water, bourbon, lemon juice and diced peaches.
- Bring the mixture to a boil and boil while stirring until frothy with some foam on top (about 3-4 minutes).
- Remove from the heat and incorporate in the pectin.
- Using a potato masher or a food processor, mash or blend to your desired consistency.
- Using a canning funnel, pour the mixture into the canning jars following the instructions that come with the jars for sealing.
- Allow to cool overnight in the refrigerator and then move to the freezer for longer term storage.
